Well, who fancies some dumplings? Whether they're cheese, bread, spinach, or bacon dumplings, there's something for everyone! I personally prefer spinach and cheese dumplings. But the somewhat lesser-known beetroot dumplings are also absolutely delicious! Which dumplings do you like best?

Dumplings have been around forever. They used to be a typical and relatively inexpensive farmer's meal, as the basic recipe didn't require much more than bread and eggs. And even today, dumplings are an indispensable part of traditional mountain cuisine in South Tyrol, Austria, and Southern Germany.
I'd like to show you how to make delicious spinach dumplings with a melted cheese core at home. Sounds good, doesn't it?
How do you get the cheese into the dumpling and make it melt? You simply need to press a piece of cheese into the middle of the dumpling mixture and roll it back together firmly. After you've put it into boiling salted water, the cheese core will melt in just a few minutes. A step-by-step guide follows now...
What you need for cooking:
- 1x frying pan
- 1x bowl
- 1x pot
- 1x mixer
Recipe for four people:
Preparation time: approx. 45 minutes
Ingredients:
- 60 g onion
- 200 g spinach leaves
- 2 tbsp butter
- 2 eggs
- 50 ml milk
- 60 g cheese cubes
- 1 tbsp flour
- 150 g firm, diced white bread
- 1 clove garlic
- 1 tsp nutmeg, grated
- some pepper
- some salt
Toppings:
- Parmesan, grated
- 60 g butter, melted
Preparation:
- Peel and finely chop the onion and garlic, then sauté them in a pan with the butter.
- Chop the spinach finely and add it. Season with salt, pepper, and nutmeg.
- Puree the spinach with the eggs in a mixer.
- Add the pureed mixture, milk, half of the cheese cubes, and flour to the white bread in a bowl and knead vigorously.
- Let the prepared dumpling mixture rest covered for about 15 minutes.
- Bring a large pot of water to a boil.
- Form round dumplings from the dough with wet hands. Place the remaining cheese pieces in the middle and close or roll the dumpling back together.
- Add the dumplings to the boiling salted water and let them simmer. Tip: when the dumplings float to the surface, they are cooked.
- Remove the boiled dumplings from the pot, let them dry briefly, and arrange them on a plate with Parmesan and melted butter.
